PURPOSE:A sweetener composition suitable for chocolate, chewing gum, sweet jelly of beans, juice, etc., having improved preventing effects on dental caries, obtained by blending a sweetener which is subjected to acid fermentation by the action of a bacterium with a chitin or a chitosan. CONSTITUTION:A sweetener such as sugar, glucose, maltose, etc., which is subjected to acid fermentation by the action of a bacterium such as Streptococcus mutans, etc., is blended with a chitin contained in arthropods, mollusks, etc., as an organic skeleton substance and/or a chitosan, a substance obtained by deacetylating the chitin to give the aimed composition which prevents bacterial plaque from becoming <=pH5.5. |
