PURPOSE:To prevent the loss of water from a food and prevent the discoloration and degradation of taste of the food, by thawing a food with chilled humid air. CONSTITUTION:A thawing chamber 1 is provided with a food container 3, a refrigerator, water-sprayers 14-16 to spray water to an evaporator 6 of the refrigerator and a blower fan 9. A frozen food is thawed in the thawing chamber and maintained (cold-keeping) at temperatures extended across 0 deg.C. In the thawing of a food, water is sprayed to the evaporator 6 of the refrigerator with the water-sprayers 14-16 to get chilled humid air of 2-8 deg.C and 95-100% relative humidity. The air is introduced into the food container 3 with the blower fan 9. When the thawed food is to be maintained in cold state, the water-spray is stopped and the rotation of the blower fan 9 is slowed down.
