PURPOSE:A vessel made of an insulation material equipped with a removable cover is partitioned with a plate having a window into the KOJI-making chamber and the compartment, an air blower is set in the compartment to sent winds into the KOJI-making chamber whereby the KOJI-making apparatus can be miniaturized. CONSTITUTION:A vessel made of an insulation material is equipped with a removable cover 2 and partitioned with a wall 3 having a window 9 into the compartment M and the KOJI-making chamber. In the KOJI-making chamber is provided with a metal screen shelf 4, while the compartment is equipped with a blower 8. A mixture K of steamed rice and seeds of KOJI is placed on the shelf 4, the water in the dishes 6, 7 is heated with heater 5 to keep the temperature and humidity at appropriate levels. At the same time, warm wind is circulated with the blower 8 in the arrow direction to progress the fermentation of KOJI. When the fermentation progresses until the fermentation heat generates, the cover 2 is removed, the KOJI K is covered with cloth, the heater 5 is stopped and cooling is effected with the blower 8.
