An installation for the pre-fermenting, shaping and post-fermenting of dough portions has a metering device (1) which, via expansion belts (2), transfers the pieces of dough to a circulating suspension chain (5) of a pre-fermenting section (7). From this suspension chain (5), pieces of dough are fed to a shaping station (8), from whence they are transferred to a further suspension chain (15) which runs through a post-fermenting section (17). To save space and energy, the post-fermenting section (17) is arranged above the pre-fermenting section (7), both sections being situated above the shaping station (8) and above the expansion belts (2), and if desired above the metering-out device (1) as well (Fig. 1). <IMAGE>
