PURPOSE:To provide a water-soluble antioxidant having a strong antioxidizing power and useful as an antioxidant, antifading agent, and a freshness maintaining agent, which comprises a water-soluble substance obtd. by extracting a rice bran raw material with a water-contg. solvent. CONSTITUTION:Raw or defatted rice bran is suspended in a water-contg. solvent. The suspension is allowed to stand at room temp., followed by filtration to obtain a water extract of rice bran. The water extract is concentrated twice or more in density by heating to obtain a water-soluble antioxidant.
