PURPOSE:To obtain tasty meat preserved with SAKE lees, by adding salt, a sweetener, seasoning, sweet SAKE, etc., to softened lamellar SAKE lees to prepare a SAKE lee bed, preserving meat which was previously immersed in SAKE with the SAKE lee bed. CONSTITUTION:Lamellar SAKE lees are steamed and softened. Salt, a sweetener, seasoning, sweet SAKE, etc., are added to the softened lamellar SAKE lees to give a SAKE lee bed. On the other hand, meat such as beef, pork, mutton, etc., cut into proper thickness was immersed in SAKE for several hours. Then, the treated meat is preserved in the SAKE lee bed to give the aimed meat preserved with SAKE lees. |
