Continuous production of sugar crystals from a syrup, by evaporation under vacuum, according to the process which consists in producing a seeding magma from a mixture of seed crystals and a fraction of the syrup, in mixing this magma with the other fraction of the syrup and in maintaining the liquid phase of this mixture in the supersaturated state in order to cause enlarging of the crystals of the magma in 10. To produce a seeding magma which has a high crystals content and which contains crystals with a homogeneous size, the seed crystals in the first fraction of the syrup are made to grow in 14 and the product obtained is separated in 24 in order to divide into two streams: a first stream 62 formed from a fraction of the mother liquor and from the large crystals, which is used as seeding magma in 10, and a second stream 64 formed from the other fraction of the mother liquor and from small crystals, and which is recycled in 14. <IMAGE>
