Appts. for pepeling casings from a string of sausage comprises drive for engaging a string of sausages and driving that string along a peeling path, a knife assembly to slit the casings of the sausages longitudinally, a hollow, perforate wheel downstream of the knife assembly, housing about the wheel, a portion of the wheel closest to the path projecting from the housing whereby sausages pass over this wheel portion; means applying suction to the interior of the wheel causing casings to be removed from sausages and adhere to the wheel and allowing skinned sausages to continue along the path. Guide determines the position of the string of sausages relative to the knife assembly and is releasably mounted in the support. |
