PURPOSE:To obtain a safe solid ethanol preparation for preserving foods, which is readily processed and easily controls vaporization of ethanol, by blending ethanol with fats and oils and/or an edible emulsifying agent in a specific ratio. CONSTITUTION:20-80wt%, preferably 40-60wt% ethanol having preferably >=90vol% purity and 80-20wt%, preferably 60-40wt% fats and oils and/or edible emulsifying agent as essential components are adjusted to 30-80 deg.C, preferably 40-60 deg.C melting point and optionally impregnated into or applied to a bulky substance, porous substance, etc.
