PURPOSE:The titled boiled rice which is suitable as polished boiled rice, rice boiled together with red beans, Japanese chestnut, Chinese millet, etc., hardly aged and has small loss in weight, uniformly containing gelan gum. CONSTITUTION:Water is added to rice, the aqueous system is blended with <=about 2wt% based on rice weight of gelan gum, uniformly stirred and boiled or steamed under heating. After the boiling or steaming, heating is stopped and the boiled or steamed rice is allowed to stand at room temperature to give the aimed boiled rice. |
