The turning cutting plates (15) of the knife head (10) have blades running centrally-symmetrically relative to a centre of symmetry (20) on two of their opposite sides and are fixed in each case by a stop (23, 24, 26, 27; 30) in their radial working position and are clamped by means of a clamping block (16) against a support surface (17) which is present in a recess (14) formed in a basic body (11). In order not to have to use the blade facing the axis of rotation of the knife head (10), i.e. the blade which is not in the working position, as the one radial stop, and thus to provide a free selection for the course of the blades, recesses (21, 22) are provided in the turning cutting plates (15), which recesses start from their blade-free sides, are arranged centrally-symmetrically relative to the centre of symmetry (20), and in which projections (30) formed on the support surface (17) engage without play. <IMAGE>
