PURPOSE:To obtain a thawed food which is uniformly thawed and has high qualities, by changing thawing conditions depending upon physical properties, shapes and freezing states of frozen foods. CONSTITUTION:In thawing a frozen food or a frozen material to be useful as a raw material thereof, a program having thawing conditions suitable for physical properties, shape and freezing state of the food is previously prepared. Then, as the program is carried out, surface temperature, inner temperature and pressure of the food are measured and they are changed to optimum thawing conditions corresponding to measured value by a control device.
