PURPOSE:To stabilize living microbial cells such as bifidus bacteria liable to be exterminated under acidic condition in an acidic drink such as fermented milk, lactic acid drink, etc., by including the living microbial cells in an inner aqueous phase of a W/O-type emulsion. CONSTITUTION:A W/O-type emulsion containing a living cell-containing liquid as the inner aqueous phase can be produced by mixing an aqueous phase containing living cells of microorganism such as bifidus bacteria and an oil or fat added with an oleophilic emulsifier. The W/O-type emulsion is uniformly dispersed in an aqueous phase (e.g. fermented milk, lactic acid drink, etc.) added with an oleophilic emulsifier to obtain a W/O/W-type emulsion. The oil or fat is preferably the one liquefying at 30-40 deg.C and solidifying at <=10 deg.C. |
