PURPOSE:To improve passage of heat, reduce occurrence of defectives and efficiently produce a product fried in an oil, by putting foods in a vessel formed around a horizontal shaft and drying the foods while rotated in a heated edible oil under reduced pressure. CONSTITUTION:A food vessel 4 formed around a horizontal shaft 6, which is supported by horizontal bearings 8 provided on an opening and closing cover 7 in an oil frying bath 1 and rotated by a motor 12. Foods 5, e.g. chiplike potato, are put in the food vessel 4 and a heated edible oil is put in the oil frying bath 1 while rotating the shaft 6. Air is then sucked through a deaeration pipe 9 to carry out frying in the oil while evacuating the interior of the oil frying bath 1. The above-mentioned rotation eliminates disadvantages, e.g. mutual sticking of floated foods, formation of products with poor passage of heat, occurrence of uneven frying, half-fried products, etc. |
