PURPOSE:To obtain pectin of an excellent quality inexpensively and in good efficiency, by drying gel-like pectin, obtained by settling an extract obtained by immersing pericarps of a citrus in SAKE (Japanese rice wine) for a given time, below normal temperature. CONSTITUTION:A citrus (A) (e.g., 'IYOKAN') is extracted by immersion in SAKE (B) for a given time, and component A is removed to obtain an extract. This extract is settled for a given time to precipitate gel-like pectin. This pectin is dried at below normal temperature to obtain powdery pectin.
