<p>By adding supplins and/or inhibitors, if applicable in combination with certain foodstuffs it is possible to control the composition of stable microbial mixed biocenoses in which lactobacteriaceae (lactic acid ferments) have a controlling action. In this way the formation of undesirable material exchange products of the bacteria can be suppressed, for example odour-generating materials in the case of sweat-decomposing bacteria or the formation of laevanes which favour the formation of caries by lactic acid ferments in the mouth.</p> |
