A process and an apparatus are described for producing foods having an edible covering. A procedure is carried out in such a way that a precisely metered amount of liquid covering composition is charged into a mould cover serving as direct packaging after manufacture of the food and having as internal geometry the shape of the finished food, the covering composition is moulded to give the covering fabricated as a hollow body open at the top, the covering composition is cooled to solidify to give the covering, the covering is filled with the filling and the covering is closed at the top. The procedure is characterised in that, to mould the liquid covering composition to give the covering, a gas jet is directed under pressure onto the surface of the charged covering composition, as a result of which the covering composition is uniformly distributed on the inner surface of the mould cover and in that the temperature of the gas is set to be lower than the solidification temperature of the covering composition, so that the still liquid covering composition held in shape by the gas simultaneously solidifies to give the covering. |
