PURPOSE:A frozen paste of the starch of the devil's tongue having a characteris tic taste of paste of the starch of the devil's tongue free from thinning phenom ena, by blending an aqueous sol solution of purified powder of the starch of the devil's tongue kept at a specific temperature with an alkali coagulating agent and freezing the blend before gelatinization proceeds. CONSTITUTION:An aqueous sol solution of purified powder of the starch of the devil's tongue kept at 0-20 deg.C is blended with an alkali coagulating agent [e.g. Ca(OH)2] and frozen before gelatinization proceeds. |
