PURPOSE:To obtain the titled food raw material having characteristic delicious taste of fish, suppressed fishy smell and low fat content, by steaming fish in a pressure cooker, crushing the softened bone and meat, stirring in an aqueous solution of rice bran or barley bran and separating and drying the precipitate. CONSTITUTION:Fish is steamed in a pressure cooker and the softened bone and meat are crushed. The crushed product is stirred in an aqueous solution of rice bran or barley bran to reduce the fishy smell and fat content taking advantage of the deodorizing action and fat-dissolving action of bran. The precipitate is collected and dried to obtain the titled food raw material. The obtained food raw material is inexpensive, rich in proteins and calcium, etc., and suitable for the use in daily dish industry, food processing industry, etc. When the fish juice extracted during the production of the above material is mixed to a dehydrated raw material and dried, a food raw material having further improved deliciousness can be produced. |
