PURPOSE:To obtain the title preparation having excellent effect as a pH-modifier for fish paste product, meat paste product, noodle, etc., by coating powder of adipic acid with an oil or fat. CONSTITUTION:The objective preparation can be produced by coating 20-70wt% adipic acid powder with an oil or fat having a melting point of >=40 deg.C. The coating can be carried out by dispersing adipic acid in molten hot oil or fat and spraying the dispersion liquid into a room of a temperature lower than the melting point of the oil or fat. The viscosity of the above dispersion rapidly increases with increasing content of the adipic acid and decreasing size of the adipic acid granule. Increase of viscosity causes various production troubles and it is preferable to add 0.05-10wt% organic acid monoglyceride to the dispersion to prevent the troubles. The average particle size of the coated adipic acid preparation is preferably <500mu to prevent the formation of white spots in the food material added with the above preparation. |
