Rapid cooling chamber for cooked dishes, comprising a leaktight chamber 50, fitted with a door 3 for introducing and removing the cooked dishes, mechanical means 1 for cooling, means 2 for ventilating the chamber in order to ensure a uniform temperature of the chamber 50, and means 13 for expelling from the chamber the calories removed from the cooked dishes to be cooled down. The chamber according to the invention is characterised in that it also comprises auxiliary cryogenic cooling means 4, 6, 9, 10 and temperature regulation means 11 which control the switching-on of the cryogenic means 4, 6, 9, 10 when the temperature in the chamber is greater than a predetermined reference value, which is adjustable and displayed by the temperature regulation means 11, and the switching-off of the said cryogenic means 4, 6, 9, 10 when the temperature drops below the reference value. <IMAGE>
