PURPOSE:To prepar a ''pourriture noble'' (noble rot) wine with a high glycerol content, by cultivating Botrytis cinerea in a grape juice containing a cyclic-3',5'- adenylic acid, and adding the resultant liquor to a grape must. CONSTITUTION:Cyclic-3',5'-adenylic acid or a derivative thereof is added to a grape juice, and Botrytis cinerea is inoculated into the juice and cultivated aerobically. The juice or a liquor after the removal of the microbial cell is added to a grape must before or during the fermentation to ferment and mature the mixture. Allylic ester derivative may be cited as the cyclic-3',5'-adenylic acid derivative. |
