Aseptic packaging of a fruit juice, principally a lemon or a lime juice, in an aerosol-type opaque container under CO2 pressure, of the type which consists in diluting a fruit-juice concentrate with water, sterilizing the fruit juice obtained with a stream of sulphur dioxide and packaging it in an aseptic environment and/or with a bacterial anticontamination system, characterized in that it consists in injecting the diluted, sterilized fruit juice at the time of its introduction into the aforesaid aerosol container under a stream of gaseous nitrogen. The invention applies particularly to the packaging of lemon juice.
