PURPOSE:To produce emulsified oil or fat having moderate fluidity and resistant to variation of physical properties such as viscosity with time, by adding an emulsifier having an HLB of >=8 to a plasticized oil or fat spread produced by using cyclodextrin. CONSTITUTION:A kneaded mixture containing 50-80wt% oil or fat, 15-49wt% water and 1-5wt% cyclodextrin as main components is mixed with a water-soluble or water-dispersible emulsifier having an HLB of >=8, e.g. sucrose fatty acid ester, polyglycerol fatty acid ester, etc. |
