PURPOSE:To obtain a sea urchin-like food having a sense of eating and flavor closer to those of a genuine processed sea urchin product, by using a raw krill flesh as a main raw material. CONSTITUTION:45-80wt% raw krill flesh adjusted to preferably 75-90% moisture is blended with 3-10wt% dried hen's egg, preferably dried egg yolk, 3-6wt% common salt, 6-10wt% ethyl alcohol, 1-3wt% mucilaginous polysaccharide, e.g. pectin or guar gum, etc., 2-7wt% saccharide, e.g. sucrose, glucose, etc., 10-40wt% various seasonings and a very small amount of dyestuff and, as desired, further 0.1-0.5wt% sea urchin flavor or 2-10wt% genuine sea urchin ovary using a silent cutter, etc., until the whole blend homogenizes. |
