PURPOSE:To produce defatted soybean malt without using pressure-cooking or cooking, by inoculating aspergillus to defatted soybean added with an acid in order to suppress the growth of sundry germs and growing the aspergillus in the medium. CONSTITUTION:Defatted soybean having adjusted water-content is added with an acid such as lactic acid, hydrochloric acid, etc., to adjust the pH to <=4.7, preferably about 4.5-3.5. An aspergillus is inoculated to the pH-controlled defatted soybean and cultured by conventional method. |
