PURPOSE:To obtain an albumen composition having high gel strength and most suitable as a gel-reinforcing agent for cake, meat paste product, etc., by adding dehydroascorbic acid to albumen. CONSTITUTION:Dehydroascorbic acid or its salt (e.g. sodium salt, potassium salt, etc.) is added at an amount of >=0.01wt% to fresh albumen liquid, frozen albumen or dried albumen. |
