A process for the preparation of 4-alkoxy-2-butenyl-1-lactones of formula I below: <IMAGE> in which R<1> represents a C1-C6 alkyl, according to which process a compound of formula II: <IMAGE> R<1> having the same meaning as above and R<2> and R<3>, which can be identical to or different from each other, each representing hydrogen or a C1-C6 alkyl, is reacted with periodic acid or a salt of this acid.
