The invention relates to an apparatus for multiple-stage sourdough production, in which the homogenisation in the stages conducted under soft conditions is carried out by pumped circulation. Flour and water can be charged automatically, the water being simultaneously used for cleaning the unused volume in a particular case of the fermentation vessel used for all stages. The invention also relates to processes which can be carried out using the apparatus.
