摘要 PURPOSE:To obtain a sterilized grain flour at a low temperature in a shot time without deteriorating the quality, by feeding a grain flour to an extruder, keeping the grain flour in a fluidized state, adding ethyl alcohol at the same time, adjusting the material temperature at the outlet and extruding the resultant material while heating. CONSTITUTION:A grain flour, e.g. wheat flour, buckwheat flour, rice flour, corn flour, etc., is fed to a single screw or twin-screw type extruder having, e.g. >=30% opening ratio, and, as necessary, a barrel is heated from the outside by electric heat, high-temperature steam, etc., to rotate the screw at 60-350r.p.m. and keep the flour in a fluidized state. 0.5-5wt% ethyl alcohol is simultaneously added to extrude the resultant material under low moisture condition in a short time while heating to give <=55 deg.C material temperature at the outlet. Sterilization is carried out to afford the aimed low-temperature sterilized grain flour having <=300 general viable cell number.
