PURPOSE:To obtain a readily eatable massive food having improved nutritive value and high utilization value, by blending bean-curd refuse with separated soybean protein and fat or oil at a specified weight ratio and kneading the resultant blend at a specific blend temperature under pressure in a twin-screw extruder. CONSTITUTION:100pts.wt. bean-curd refuse is blended with 7-30pts.wt. separated soybean protein and 1-30pts.wt. fat or oil, e.g. soybean oil or corn oil, and the resultant blend is then kneaded at 140-170 deg.C blend temperature under pressure in a twin-screw extruder to afford the aimed massive food. Since the resultant massive food is produced in a completely sterilized state, it can be preserved for a long period if a means, e.g. refrigerating preservation, etc., is adopted. The resultant product may be used for a daily dish and as a raw material for producing boiled fish paste, sausage, Japanese crackers, etc. Furthermore, wheat flour, starch, seasoning, paste, colorant, etc., may be blended. |
