PURPOSE:To produce a high-quality pickling bed which has extremely improved adsorption ability of seasoning and a mellow taste and shows a smooth slurry state, by using grain treated with saturated steam under pressure by heating as a raw material. CONSTITUTION:Grain such as rice, wheat, miscellaneous cereals, etc., is heat- treated with saturated steam preferably at 2-6kg/cm<2>.G for 10sec-60min, pressure is gradually reduced and the grain is discharged without expansion. Then, the heat-treated grain is directly blended with any seasoning or ground and blended with the seasoning, aged and, if necessary, the prepared pickling bed is partially or totally ground.
