PURPOSE:To obtain the titled food having meat-like palatability and appearance from yeast with extremely simple process, by adding water to yeast and treating the mixture with a twin-screw extruder. CONSTITUTION:Yeast or yeast protein separated from yeast is added with usually about 45wt% water and optionally with an oil or fat. The mixture is processed with a twin-screw extruder to obtain the objective food. The processing with extruder is carried out preferably at 140-200 deg.C. |
