Tinned full and half-preserves of turkey and chicken meat, pref. breast and/or leg meat, are prepd. by treating the meat in a tumbler with a marinade, mixing the marinated meat with a natural protein emulsion and packing into tins in the known way, sealing the tins and finally heat-treating the prod. The prod. is similar in structure and character to pork ham, and is a nutritionally valuable food. |
