PURPOSE:A pyruvic oxidase which is produced by a bacterium belonging to the genus Lactobacillus and has the optimum pH in weak acidity and improved thermostability. CONSTITUTION:A pyruvic oxidase which is produced by a bacterium belonging to the genus Lactobacillus and has the following properties. Namely, (1) catalyzing a reaction to produce acetyl phosphate, carbon dioxide and hydrogen peroxide from pyruvic acid and an enzyme. (2) Specifically acting on pyruvic acid. (3) Having the optimum pH 6.2. (4) Having <=40 deg.C thermostability. (5) Requiring thiamine pyrophosphate and FDA. (6) Having about 230,000 molecular weight. (7) Having 2.9X10<-3> Km value to pyruvic acid and (8) 4.4 isoelectric point. Lactobacillus sp. IFO 3955, IFO 3957 and IFO 3958 can be used as preferable bacteria.
