发明名称 COMBINATION ICE AND PREPARATION THEREOF
摘要 PURPOSE:An edible foam layer is integrally formed on the ice cream lower layer to give a combination ice rich in decoration with unique texture. CONSTITUTION:A stabilizer composition containing a foaming powder and a polysaccharide such as xanthane gum is placed on the ice cream in a vessel. The foaming powder is foamed by spraying with water and the foam layer is hardened by freezing. Thereby the objective combination ice cream having the foaming layer and ice cream layer is obtained without adverse effect on its soft appearance by freezing. The resultant combination ice cream is enjoyable with the light texture by the upper foamed layer and the rich texture by the lower ice cream layer. Further, various kinds of ingredients are used to give a large variety of textures.
