PURPOSE:To rapidly carry out cooling of cooked rice and obtain safe and hardly putrefiable cooked rice, by initially blowing cold air on the surface of just cooked rice in cooling thereof and vacuum cooling the resultant cooled cooked rice. CONSTITUTION:Just cooked rice is put in trays 10 and set on stages of a cooler 1 having many divided stages. When a blower 6 for circulating cold air is started, air is cooled in a heat exchanger 7 in which brine cooled in a refrigerator 13 is circulating, degermed with an air filter 8 and blown from cold air blowing pipes 3 on the cooked rice on the trays 10. If the temperature of the cooked rice attains <=20 deg.C, the trays 10 are taken out of the cooler 1. The trays 10 are then put in a vacuum cooler and vacuum cooled. |
