PURPOSE:To increase the content of a hydrophobic liq. in yeast by adding the hydrophobic liq. into a water-soluble liq. contg. a high molecular emulsifier, emulsifying the liq., adding the obtained emulsion into a liq. dispersion of yeast to incorporate the hydrophobic liq. into the yeast. CONSTITUTION:The hydrophobic liq. is added into the water-soluble liq. contg. a high molecular emulsifier having >=1,000 mol.wt. to emulsify the liq. mixture into fine droplets. The emulsion is added into a liq. dispersion of yeast to incorporate the hydrophobic liq. in the yeast, and a microcapsule is produced. The amt. of the high molecular emulsifier to be added is controlled to 0.01-10pts. or appropriately to 0.1-5pts., based on 100pts. hydrophobic liq. Although the diameter of the fine emulsified hydrophobic liq. droplets is not specially limited, the diameter is appropriately controlled to <=1mn. The yeast is the microbes which propagate by budding or division, and ascospore yeast performing sexual reproduction and anascospore yeast not performing sexual reproduction can be exemplified. |
