PURPOSE:To obtain a yeast extract composition capable of effectively improving the bitter taste, unagreeable smell, fishy smell, harsh taste, etc., by carrying out the autodigestion or enzymatic decomposition of yeast to a specific free amino acid content, and adding a specific amount of glutathione to the decomposed product. CONSTITUTION:Yeast (e.g. baker's yeast) is subjected to autodigestion or enzymatic decomposition until the free amino acid content per unit protein reaches <=30%, preferably 10-20%, and the product is added with glutathione to obtain the objective yeast extract composition. The amount of glutathione is >=10%, preferably 10-50% based on the nitrogen content in the decomposition product. |
