A process which makes it possible to dealcoholize wine and/or cider partially or totally while preserving the taste and aroma of the treated product. The appliance employed comprises a vessel 5 which contains the liquid which is to be treated, a module 13 for reverse osmosis and a closed circuit between the said two elements for circulating the liquid which is being treated through the module and returning the liquid to the reservoir. A high-pressure pump 11 and means for controlling and regulating the pressure, temperature and quantity are installed in the said circuit for permitting implementation of the dealcoholization process. Means 68, 63, 57 are present for injecting chlorine-free demineralized water for the purpose of compensating for the loss of permeate. An ingredient vessel 70 is present for mixing ingredients which are to give back the treated liquid its original taste and aroma. The invention can be used for all liquids which contain alcohol, in particular wine. <IMAGE>
