A chilled mass of uncooked meat is subjected to compression to release some of its juices, and then moved, under compression, generally in one direction and the moving meat is cut to form a plurality of elongated extrudes. These extrudes are released from compression, and their surfaces are thus coated with the juices, and are then compacted into a confined form and processed, for example by cooking, freezing, or smoking, to bind the meat pieces together by the juices. The process may be conveniently effected in a modified mincing machine, the end plate being replaced by a plate comprising a spiders'-web-like arrangement of cutting edges. A single rotating knife may be provided on the feed screw to cut tendons &c. In examples, meats treated were fresh beef and pork, marinated beef, and brine-cured ham. |
