<p>PURPOSE:To process raw WASABI (Japanese horseradish) by a method except conventional production of WASABIZUKE, by washing raw WASABI, cut into a desired size, packing cut WASABI and a blended flavoring solution for seasoning into a container, closing the container with a cover, rapidly heating, continuing heating for a fixed time and rapidly cooling. CONSTITUTION:Raw WASABI is washed with water, cut into a desired size, packed into a container and a proper amount of a blended flavoring solution for seasoning is poured into the container. The container having the raw WASABI and the blended flavoring solution is closed with a cover and set in parallel to a heater. The container closed with the cover is rapidly heated to a fixed temperature, kept at the temperature for a given time and further rapidly cooled to a fixed temperature. Then the container after cooling is taken out from a heater and packaged. Consequently, raw WASABI can be processed by a method except processing method of conventional WASABIZUKE. Leaf part of raw WASABI can be used. Use of this WASABIZUKE can be made wider than that of conventional WASABIZUKE.</p> |
