发明名称 PREPARATION OF FERMENTED FOOD
摘要 PURPOSE:To produce a food like AMAZAKE (sweet drink made from fermented rice), by cooling a heat-treated onion to optimum temperature for fermentation, mixing with rice malt, aging the mixture under heat-insulated condition and removing fibrous component from the aged product by filtration. CONSTITUTION:A peeled onion is thoroughly washed and heat-treated e.g. by boiling or steaming, etc. The heat-treated onion is left to cool to a temperature suitable for fermentation and mixed with rice malt. The addition of the rice malt is preferably carried out when the temperature of the onion reaches about 30 deg.C and the necessary amount of the rice malt is >=15wt%. The mixture of onion and rice malt is aged at about 30 deg.C and, after the completion of aging, filtered with a filter cloth, etc., to remove fibrous component from the aged product. The filtrate is used as a drink in cool or hot state according to the taste.
