PURPOSE:To produce a protein food having texture similar to that of dried stretched cuttlefish, by treating protein or a protein-containing raw material by a twin screw extrusion cooking device and passing a formed texture protein sheet through between rollers. CONSTITUTION:Protein or a protein-containing raw material such as beans, fish and shellfish, marine beef, a mixture thereof, etc., extruded and cooked by a twin screw extrusion cooking device. Then, the prepared texture protein sheet is passed through between rollers to produce a protein-textured food. An extruder which is equipped with a feeder, a barrel, twin screw, die a heater for die and barrel and cooler and can carry out blending, compressing, kneading, grinding, shearing, heating and sterilization by one unit can be used as the twin screw extruder.
