PURPOSE:To obtain a nutrient-enriched cream composed of a W/O/W-type emulsion containing nutrient agent, having low fat content and low calorific value, enriched with nutrient, and suitable as a whipping cream or coffee cream. CONSTITUTION:An aqueous phase containing a nutrient agent such as calcium chloride, vitamins, amino acids, etc. is mixed with an oil or fat added with preferably 0.7-2.5%, based on the oil or fat, of an oleophilic polyglycerol fatty acid (e.g. tetraglycerol condensed ricinoleic acid ester) at a ratio (oil:water) of preferably 3:1-1:3. The obtained W/O-type emulsion is mixed with water or an aqueous phase having emulsifying and/or emulsion stabilizing effects (e.g. a solution of polyoxyethylene sorbitan fatty acid ester), and stirred at e.g. 250- 500rpm for 5-10min with an agitator to obtain the objective cream. |
