The process for cooking food in the presence of steam consists in injecting superheated steam into a cooking enclosure. This superheated steam is formed by bringing the steam into contact with a heating resistor 4a, 4b, this contact being sufficient for substantially all the steam injected into the cooking enclosure to be superheated. The heating resistor 4a, 4b may or may not be the resistor normally serving to heat the interior of the cooking enclosure. Used in particular in steam-injection electric ovens and in steam cooking appliances. <IMAGE>
