PURPOSE:To produce a steel strip for cutlery having good resistance to edge chipping and cutting quality by quickly cooling the hot rolled steel strip from a specific temp. then quickly heating the same and subjecting the steel strip to slow cooling after holding at a specific temp. CONSTITUTION:The hot rolled steel strip is quickly cooled at about >=140 deg.C/sec cooling rate from >=950 deg.C to prevent the precipitation of secondary carbide. The steel strip is once held at <=600 deg.C at which the flocculated coarse carbide is not formed in the case of the coiled steel strip. Such steel strip is then quickly heated at a heating rate of about >=200 deg.C/hr and is slowly cooled at a cooling rate of about <=30 deg.C/hr after holding at a temp. range of the Ar1-50 deg.C from the temp. right below the Ar1 point. The structure of the steel strip subjected to annealing in the above-mentioned method has the carbide of a uniform grain size and is excellent for cold working such as rolling and cutting.
