PURPOSE:To obtain an orange and plum jam having the taste and flavor of orange and acid taste of plum and useful as a health food, by chopping pickled plum having decreased salt content together with orange pulp and orange peel free from bitter taste, adding sugar to the chopped pieces and concentrating the mixture with heat. CONSTITUTION:Pickled plum is stoned and immersed in hot water to decrease the salt content. Orange peel separated from pulp is immersed in hot water of about 70 deg.C for about 10min and the operation is repeated to remove bitter taste from the peel. The pickled plum having low salt-content is mixed with orange pulp and orange peel free from bitter taste, chopped with a chopper, added with sugar and concentrated by heating. |
