PURPOSE:To readily sterilize powder, by applying shearing force to the powder while heating during transfer of the powder in a cylinder by rotation of a screw and sterilizing the powder. CONSTITUTION:Powder for processed uncooked food, e.g. wheat flour, buckwheat flour, etc., containing 5-25wt% added water is charged into a hopper 4 of a screw type extruder and then shearing force is applied to the powder in a laminar state while heating at 50-90 deg.C and transferring in a cylinder 3 by rotation of a screw 10 of the extruder to sterilize the powder and give 10<-2> cells/g level of Escherichia coli in the above-mentioned powder. As a result, sterilization treatment can be readily carried out as compared with that of a conventional sterilization method and this method is very effective as a sterilization method of powder for processed uncooked food, e.g. noodle production on a medium scale, etc. |
