PURPOSE:Wheat flour products are fermented with yeast, roasted, combined with oil and sugar, then treated with a twin-shaft extruder to produce food suitable for use as a filling, topping or sanding material. CONSTITUTION:Wheat flour is fermented using yeast and roasted. The product or its crushed product is combined with 0.1-5pts.wt., per 1pt.wt. of the roasted product, of oil, 0.1-3pts.wt. of sugar, when needed, additionally appropriate amounts of starch, ethanol and/or alcoholic beverage, or nuts, then the mixture is kneaded in a twin-shaft extruder and, when needed, heat-treated.
